Porcupine Meatballs

This is a recipe that my family begs for. They begged again this week, so we had them today for dinner (lunch). Here is the recipe.

Classic Porcupine Meatballs
1 1/2 lb. ground beef
1/2 c. UNcooked converted rice
1 1/2 tsp. salt
1/4 tsp pepper
1 tbsp. minced yellow onion (or dried onion)
1 can (10 1/2 oz.) condensed tomato soup
1 soup can of water
1/4 c. ketchup

Using hands, mix together beef, rice, salt, pepper, and onion in large bowl. Shape into 2 inch balls. Mix tomato soup, water and ketchup in med-sized heavy kettle or pan. Bring to simmering over med heat. Add meatballs, adjust heat to simmer. Cover and simmer 1 hour, turning meatballs once, until cooked through. (Family Circle 1-6-98)
