Scalloped Potatoes


My sister-in-law Betty makes the best scalloped potatoes. It's different than how my mom made them: Mom's recipe used a white sauce with flour in it. Now that mom knows she is a celiac, this recipe works better for her, too.

Betty's Scalloped Potatoes

about 6-8 potatoes, washed and sliced (peeled, if desired)
1/2 med onion, chopped
Chopped ham or sliced hot dogs
1 pint half and half
1 pint cream
salt and pepper to taste

Layer potatoes, onions and meat in a large casserole, salting and peppering each layer. Pour cream and half and half over layers to within about 1 inch of the edge of the casserole. Cover and cook about an hour until cooked through and thickened.
